EVO Oil Podere Pagliaiolo: soil, water quality, exposure, plant care gives a magnificent result, recognized and rewarded by professional experts. The olives are pressed by a mechanical cold-pressing continuous process within 24 hours of harvesting, to ensure the preservation of the organoleptic qualities of the fruit and preserve its strong aromas. The olive oil is stored in stainless steel tanks with nitrogen at a temperature of 15-18 º C at the Frantoio Rossi. The early harvesting and the squeezing system are certainly at the expense of the overall production volumes, but they ensure the highest quality of the oil. The olive grove is a strong symbol of identity for the Podere Pagliaiolo. A green park that under the moon becomes silver: landscape, perfume, culture, flavours and atmosphere of Tuscany. Olive grove as wisdom, as a land of thought, symbol of history, of different cultures and religions, pleasantness of a habitat in balance between peace and vitality. The olive grove of our farm is the result of the recovery of ancient plants, to which we have added new trees, mainly of mill quality, moraiolo and leccino, and today we count more than 400 plants for a production of extra virgin olive oil of excellence.
In autumn, at the beginning of the ripening of the drupes, we pick the olives by hand and with mechanical rakes. The work of the collection, tiring and intense, involves our whole family and turns every year into an occasion of conviviality. Guests can take part in the olive harvest, watch the pressing, walk along the paths running through young and old plants. Tasting of the new oil, accompanied by fragrant bread, tasty cheeses and excellent Tuscan wines. A holiday, a weekend, in the period of the olive harvest, the ceremony of tasting the first oil, is a really unique experience, not to miss.
The highest recognition of the Italian Association of Oil sommeliers and the Italian Sommelier Foundation, the International Centre for Wine and Oil Culture, are the 5 drops assigned to the EVO OIL 2018 of Podere Pagliaiolo.
